Taste & Texture
Nutty, faintly grassy and distinctly creamy. There is almost no sweetness, which is precisely why it pairs so well with salt, lemon and olive oil. If it yields gently to a squeeze in the palm, it is ready.
How to Enjoy
- Mash with lemon, salt and olive oil for guacamole.
- Slice over toast and top with an egg.
- Add to smoothies for a silky texture.
- Use in place of cheese in salads for richness.
Storage
If firm, rest at room temperature for 2–4 days; placing it in a bowl with bananas speeds ripening. Once ripe it keeps 3–4 days refrigerated. Rubbing lemon on the cut surface slows browning.
