Almost ornamental in its spiked orange skin, this African-origin fruit hides an emerald-green, jelly-like interior. It is one of the great conversation pieces of the fruit bowl.
Taste & Texture
Where cucumber, melon and lime intersect — lightly tart and extremely refreshing. The texture is made of jelly sacs surrounding the seeds. It is ready when the skin is a bright orange.
How to Enjoy
- Halve and spoon out the interior with a little salt or lemon.
- Strain the jelly into summer drinks.
- Use as a garnish over yoghurt or ice cream.
- Add to salads for unusual texture and colour.
Storage
Keeps an unusually long 2–3 weeks at room temperature, which sets it apart among exotic fruits. Refrigeration is not advised — it can suffer chilling injury.
