Lime

Smaller than a lemon, darker green and far sharper. Lime is the finishing touch that completes a plate or a glass — and its zest is every bit as valuable as its juice.

Taste & Texture

High in acid, sharp and markedly aromatic. Unlike lemon it carries a faintly bitter back note, and that note is exactly what creates depth in savoury cooking. Fruit with bright, thin skin that feels heavy for its size will be the juiciest.

• Squeeze fresh into mojitos, gin and tonic, and lemonades.

Storage

Keeps a week at room temperature or 3–4 weeks refrigerated. Wrap cut fruit. The juice freezes well in ice-cube trays for long keeping.
